Meet Jacqui

I am a Jersey Girl who recently moved to the Sunshine State.  I have made a career based around the food industry ~ from event planning in Restaurants and Catering to becoming a Chef at a natural food store and now a Personal Chef to clients who want to eat healthy and live better.

I like to think of myself as a “foodie” ~ but with a passion for nutrition. You would think it would be the other way around – food being the main passion.  But I have seen the miraculous wonders fresh, organic, natural foods can do in healing diseases & illnesses in the lives of my friends, family, clients & even in my own life.  I was diagnosed with Breast Cancer in 2014.  (see page: C is for Cancer; S is for Shock for the full story)  It took me all of 2014 to go through the whole process – from getting the news to having 2 surgeries to finally feeling like “myself” again.  It’s been a journey but I firmly believe God has supplied us with all of our needs to live healthy lives.  When my children were young I taught them that fruit was “God’s candy” ~  I still believe this wholeheartedly!

I am currently studying to become certified in nutrition so as to guide others into living healthy, vibrant lives.

Trust me, I know how difficult it is to stay on a regimented diet.  Remember, I’m a Jersey Girl through and through… I was brought up on Ruffles Potato Chips, Little Debbie Snacks, Diners & Fast Food,  (which by the way, will always be a temptation), etc.  But I also know – for me – I ALWAYS feel better, look better, play this game of life better when I am eating right.  Sure it’s a no-brainer when time is of the essence to grab a burger from the drive-thru lane; but to me, it is so worth the extra time involved in chopping, blending & pureeing when eating to live, rather than living to eat.  I’m not perfect…. I still love all types of food, cooked all types of ways (who could ever pass up Southern Style Fried Chicken?  Not this girl!) But on a daily basis I choose foods that will be a benefit to my health ~ not a detriment.

I actually started this blog because of all the tempting foods out there.  I need to be held accountable just like everyone else… and so with my writings (A thru Z) I just don’t tell you what you should be eating and why – I am also speaking to me.

Don’t give up on me.  I’m not here to preach, judge or analyze about what you’re eating.  I am merely writing in hopes of guiding you to try new or exotic foods; maybe vegetables you’ve never heard of or a fruit you’ve sworn you’d never try.  I myself am not vegan or vegetarian – but I do know our bodies do best when we consume a diet of foods solely from the ground; this is why most of my blogging consists of vegetarian/vegan recipes.

No need to fret (speaking to my “everyday followers” who LOVE having a side of beef with their sauteed Kale) – I will be posting “normal” dinner dishes for y’all!
